No valance they are so out of style,How about dusty sage green or terra cotta, its a deep colour not to dark, earthy and warm red brown and you have to use a primer under it for the color to be true. The butcher block counter top is nice but you would still have to use a butcher block on top so that you do not chip it.Use a natural rock or
you can get a vinyl tile that looks like natural stone for back splashes
saw them on city line this morning and they come in many colors. Also they were showing glass tiles but very expensive.

play around with the Sherwin Williams color visualizer to find colors that you like. It is the best paint visualizer on the web, imho. I like how their color palette is laid out, I like that you can search by color family & color name, the “painted” rooms look the most realistic, and it suggests coordinating color schemes. You can literally spend hours:

I think “quite coral” (# 6614) might be a good choice. It’s a warm pop of color without being too bright & overpowering.

You can also take a photo of your house & upload it to the makeover gallery on this website:

You can get color suggestions & for $5 they’ll photoshop them onto your room so that you can get an idea of what it will look like.
