What color and species of cabinets with gunstock oak floors.

Every other house I had I did Honey colored Oak but this time with med. color oak what do you think. I was afraid of too much oak grain. Cabinet guy says no one is doing oak anymore and all cherry or maple. What do you think. Counters too. All my wood furniture is a golden honey colored oak so should I stick with oak cabinets too. My first choice is a natural cherry with chocolate glaze but afraid of it darkening. The kitchen I just tore out was dark walnut stained oak so I want a big brighter difference.
